The YOSHIDAHAMONO Funkai Santoku is built on the premise that serious cooks should not have to choose. The Funkai profile combines the flat push-cutting edge of a Santoku with a taller heel and reinforced spine that handle proteins with authority — boneless chicken, fish fillets, dense root vegetables — without switching knives. At 159 mm (6.25 inches), it is the most maneuverable blade in the Yoshidahamono range, suited to smaller boards, tighter prep spaces, and cooks who want control over reach. The Aogami #2 core reaches HRC 62–64 — harder than stainless Japanese knives at 60–62 HRC and significantly beyond German stainless steel at 56–58 HRC — sharpened to 15 degrees per side at the factory. Carbon steel at this hardness achieves a finer edge than stainless can sustain. The care requirement is simple and non-negotiable: hand wash, dry immediately after every use, apply food-safe camellia oil periodically, store dry. The blade will develop a natural blue-grey patina that protects the steel over time. Sharpen on a whetstone only — do not use ceramic honing rods. The white magnolia (Ho wood) wa handle is chosen for its exceptional lightness and natural grip surface. At 30.5 cm overall, the knife is compact and balanced. Magnolia handles are traditionally replaceable — an option not available on western-handled knives. The kurouchi forge-scale finish on the upper blade reduces food adhesion and marks the knife as hand-finished rather than machine-polished. It smooths with use over time.
